How do i get access to researched shops?

So ive started a challenge mode, and ive been researching lots of shops. Some like the ATM when they have completed have shown up in my buildings, but others like the balloon shop other types of food and drink shops havent and im not sure why? Do i have to build them or something from another menu. Also does anyone know a way to universally price shop items / rides of the same type? Thank you

I think you need to select "custom" instead of blueprints - basically if you can see the shops that have nice scenery built on to them you are looking at the wrong tab - when you research them you get access only to the plain cube box store with no fancy scenery tacked on.
