Umm.. Cough, cough, learn to dock COUGH...
If you're at the controls, you don't need DC, because you can dock much faster and more reliably (after a day of training) and if you use DC to take a break and stratch your legs on the way to the bathroom, you aren't bothered by the music.
In all seriousness, though, I think that you can't specifically turn off just the DC. It might be devs reminding you how sappy you are.

I know how to dock, and yes I do it faster than the DC
It's just a welcome break to streatch my arms between all the trading.
EDIT: There is indeed an option in the sound menu!!

I have no DCs anymore but from memory in the sound menu you can turn them off??

When we get shuttles in game that is the one I want.
I haven't had a docking computer yet (I haven't had a big enough ship to have slots I don't want to put other things into yet), though I do hear Blue Danube every time my husband docks. I like that it plays classical when you dock, I just wish there was a selection. Might not be fitting, but I'd personally love to have the chance to also hear, oh, Hall of the Mountain King or Four Seasons (Winter).
Nothing stopping you from running VLC on the side. There's even a skin for VLC to make that blend in with the rest of the game.
Personally I think having that in was probably a direct order from DBOBE, and one that I completely agree with.
Why do people find it so hard to dock manually? i`m just a noob, but i love docking by hand. It`s not hard either. Perhaps it`s because i`m used to making far harder landings in realistic flight sims. That`s the only reason I can put to it.
Hey, thanks for that! I've absolutely nothing against Blue Danube, it's just that whenever I hear it, it also makes me think about other things I'd like to hear, too. And I'm the kind of person who usually does not like to listen to out-of-game music while playing, but with Elite, I just can't help but think 'gimme more classical' whenever I hear it. It's oddly fitting for this game. (I never played the '84 version, & it seems like it was there as well, which is pretty great!)
I'm an on-and-off soundtrack guy. Sometimes I prefer something else playing, sometimes I just enjoy the game's excellent soundtrack.
I am *so* glad they picked an actual composer to make the music. As in, someone who studied music theory. Also, the most beautiful parts play when you drive your SRV on a planet and find something interesting on the scanner.

When you're not speeding and don't hit boost 3km away from the station, Cutter is as easy to dock as any other ship.
I have a pretty good reason for you: Whenever I have to dock manually, I have a 5% chance to wreck my ship...
