While I will say that multicrew currently sounds pretty sweet from a combat point of view, this new feature could have given new gameplay to many playstyles in the game, not only combat but including trading, mining, and exploration. A large percentage of the players do not play combat regularly, in fact combat isn’t even the style that is played the most:

The poll is too fragmented and thus gives a wrong impression.
If you add up the numbers for all the choices that = Shoot stuff ... and compare to the numbers on choices that = Peaceful...
Peace = Trader, Explorer, Scientist, Spaceship Racer, SRV Racer, Miner.
Shoot stuff = Mercenary, Bounty Hunter (PvE+PvP), Pirate (PvE+PvP) and Imp/Fed/Alliance (Powerplay)
Peaceful = 466 votes
Shoot stuff = 316 votes
So while true that more people prefer the peaceful stuff (at least among those who voted on poll) the numbers aren't that far apart.
Also... players are not categorically playing only one playstyle. Many prefer a more dynamic approach to the game and participate in various activities. I do as much trading and mission trading as I do bounty hunting. So am I a combat oriented pilot or a peaceful one? As far as the poll goes I would have voted both choices, or not voted at all.
However...
I do fully agree that the multi-crew needs to encompass more than just combat.
Your suggestion about engineering station is spot on when it comes to what I expect to see in multicrew. A co-pilot is primarily present in any type of vehicle to reduce the workload on the pilot. Handling navigation, scanners, AFM repairs, drones/limpet controllers, refineries are ideal tasks for a co-pilot.
I truly hope FDEV takes this into consideration.
