Do I need only one Guardian Module Reinforcement for protection against HUD scrambling and forced module reboots caused by a Thargoid Interceptor's lightning attack or more modules give better protection against that?

GMRPs are better than regular MRPs if you can afford the power draw because normal MRPs cannot be engineered and GMRPs have higher integrity.
