Frontier some of these missions have totally unrealistic time restrictions put on us.

I've yet to see a mission offer less than 24 hours to complete. Some offer multiple days. If what you're doing is taking longer than the time given to complete, you must not be doing it right or efficiently enough.
Given the threads title OP may just be referring to the time bonuses that ping on some missions.
I remember scooping something up on a planet once and being given just 2 minutes to find my ship, take off, escape orbit, dock and hand the mission in. Impossible.
Looks at the bonus amount. Decides not to care at all. YMMV
