Some of the attractions that I liked the most in RCT3 were non-rides that were customizable or let you edit a path in some way.
These include:
Mini Golf!
The ability to layout the course the way you want with a wide selection of holes to choose from is great.
Haunted House
This would be especially fun in Planet Coaster as you could actually build the walls and decorations around the haunted house path.
Gentle Rides
Rides that aren't roller coasters that you can edit the tracks for. Some notable ones were pony and elephant rides, lazy river, train ride, antique cars ride, log flume, etc.
Swimming Pool!
Self explanatory. It's so much fun laying out the perfect shape and size for a pool, filling the area with decorations, placing items like diving boards and life guard stands, wave pool generators, underwater lights and bubblers, and creating water slides that empty into the pool.
