So, without further ado:

What building piece could you not do without?

New world theme wall set, really love thé modern wood look.
Mesh pieces - so grateful that these were added! Very useful for realistic enclosures for monkeys, cat species and others.
Faux Aquatic rocks and trees - honestly some of the best additions to the game for me, as they are used heavily in real life zoos.

It's impossible to choose one piece, so I will say that my favourite pieces are the most simple ones: the wood/log/glass/stone/plaster sets.

However, I want to mention the waterfall pieces that came with the aquatic update. I was never able to build a decent waterfall before, and these new pieces are very handy to me.

I think I have to do this by DLC just to cover them all 😅

Base game:
Plaster, planks, chainlink and bracket for sure. Those are the main ones I use in literally every zoo ever.

Arctic:
Beams.

South America:
BEAMS. The flexicolour beams are just one of the best items in the game, if not the best. I also regularly use the temple pieces, but more as a dirty concrete than anything else.

Australia:
RODS. Seriously. The rod pieces are absolutely brilliant. If we could get a version that's even smaller or just a few items that allow us to make smaller circles that'd be perfect.

Aquatics:
Surprisingly, I don't use much of the building pieces of this pack as often as I thought I did. However, the faux tree branches are a big win.

Africa:
Basically every small plaster piece.

Honestly, I think the pieces I use the most can be summarized as flexicolour, non-grid, flexible in use and in sizes from really small to really big :D
