How do I get the blue lines to go away? I can't see where I want to go because the lines are not helping...

What are they even meant to signify?

Lines are routes to stars you can jump to.

I don't think you can turn them off?

You can zoom out and these will diminish in intensity.

You can get them to go away temporarily by unchecking the plot type (in other words, don't have either fast travel or economic travel checked). But put it back afterwards to avoid errors.
