Just found out that at least my Game doesn't crash when it is paused. So if you still have your save game and you have Time to pause it before it crashes, you'll be able to save your Buildings and Habitats as Blueprints and export your Animals to another Zoo. I will try to find out what could've caused it and if I don't find out, I just make a new Zoo in Temperate Europe and with the same Name
