So when i'm fuel scooping, occasionally i get too close and my ship gets out of super cruise. The only way out, so far, seems to be to jump to aniother system. Is there any other way?
Wait for the FSD to cool down, then hit local supercruise flight - you'll have to aim for an escape vector on the HUD to get out of the star's grav field, AND you will heat up while doing it.

Well how its set up is usually i use my FSD, when im not using it, to go into supercruise. Then, i do it again once i lock onto another system to jump to. The problem is, when i get stuck by the sun, it DOSN'T activate at all, and only does once i lock onto the next system and jump.
If you can jump to another system then you should just be able to enter supercruise. You can do this by selecting a target in system and using your normal fsd key or by binding a key to the fsd supercruise option (which is not bound by default).
