So I've never done any mining in Elite Dangerous. And this update has added new ways to Mine, but I'm not finding any guides on how to do it. Anyone point me on the right direction? I've got a fully kitted out Corvette that I plan to use.

Haha, I can't leave it like that... You'll need the new mining hardpoints, prospector and collector Limpets, cargo racks, refinery, a pulse wave analyser and the detailed surface scanner in order to make full use of the new mechanics.
Make sure your ship has at least 3 hardpoints and one of which is medium sized if you're only going to use the new tools, or 4/5 if you're going to take the mining lasers (you can still mine the old way)
