I realise many players have head/eye trackers or VR, but there could be a third way to get a "real feel" cockpit!
It would be great to have a mobile app running on a smartphone or tablet that sits next to a monitor, upon which you can display any or all of the UI Menu Panels, so you can use them as touchscreens to mimic the in-game holoscreens. Whether that's via USB link or, like some of the command matrix apps, via your ED account via the cloud, maybe even the same Wifi network.
EG: You can set the tablet to display a menu you'd normally have to hit "1" or "4" to view, which would have the benefit of not taking focus away from your main screen (great for combat scenarios), and maybe even have a smartphone running the Comms menu, too! A bit like this:

(apologies for the quick 'n' dirty sketch there!)
Obviously, these would be directly tied into your account/game for security and you'd be able to use several devices simultaneously. Buying a couple of cheap 8" Android tablets would suddenly bring your low-rent cockpit to life!
There could also be an option for swiping between panels for single-tablet deployments.
I'd certainly be happy to purchase this as an option in the Frontier store.
