I'd only be interested in mining on foot if it involved planting loads of high explosives and watching stuff go boom then collecting the proceeds.
But we collect stuff at what, 1 ton per unit? Or whatever the measurement is in game (I forget).
Mining on foot you're collecting handfuls at a time. A mere fraction of the standard unit. You and your tiny handheld mining laser are nothing compared to a ship's mining laser, or collection capacity.
I don't see the potential for mining on foot unless it's a whole new grind for materials you can only find on foot
(and I don't play Odyssey so new materials for all new engineering grinds may already be in the game lol).
You are not considering that most planets have a very low gravity, so they will introduce a harness for on foot miners, and this will become a common view
Of course, the bus can be replaced with a cargo module, and suit engineering will allow us to drag much bigger ones!
Raw mat chunks are small enough to carry one, maybe two, at a time. I can see it being quite handy to be able to collect raw mat chunks on foot and carrying them to your SRV, particularly in terrain that's a little awkward for the SRV but manageable on foot.
I should add: I've actually had to get out and shoot crystalline fragments off shards using my plasma rifle because the SRV's cannon just wouldn't shake them loose.
Can I throw them at the windows of other peoples' SRVs?
Only if we can make it a team sport.
