It shouldn't be possible for tracks on a coaster to run through each other, plus everything I build comes up too extreme

The possibility of running trains through each other is part of the creative freedom we all wished, hoped and asked for 
It's all up to the end user to come up with a good coaster layout which you can make as crazy and unrealistic as you want, or take a more realistic approach
