If I do research in one of my zoo, is it unlocked in all of my zoos? Or do I need to do research for each and every zoo?

In the beta if you researched one zoo then changed to another you had to research it all over again , Nothing research wise was carried over

Every zoo is a new game, in this respect.
It's done so that research centers are not obsolete afer the first zoo and the related management challenges stay relevant when starting anew.

what we don't know is that you couldn't start beta research until you bought an animal - can we start research on elephants in Zoo B if Zoo A owns an elephant or would we have to move it from Zoo B and put it in a trade centre (at which time it can be accessed by all zoos)

Or will research be far more open than it was in Beta so I can start elephant research in Zoo B, before any zoo has even thought of an elephant

Apparently it's neccesary for a vet to visit the animal in order to research its needs and illnesses.
Therefore it's recommended to place a research center near to its habitat.
And it's also highly unlikely that it is possible to research anything, if the animal is not present in the current zoo.

i dont know how it will be, but you can "cheat" it, by buying a bad, old animal and hand it around every zoo, and do the research with it. unfortunately, you not only had to buy it, but it must also be in an enclosure, as i remember it.
