So here I am at the Conflux abandoned settlement site, with my SRV stuck in a building. Not quite sure how that happened (I was just driving along quietly, honestly, officer ... ). But it did look like the game glitched for a moment there. And now the SRV wheels are wrapped round a structural member, and I am not going anywhere.

I really don't want to self-destruct to get out of this one - I've already had to make one trip back to Rohini to replace my SRV (wrecked in an ill-considered attempt to jump it over my ship using one of the gantry ramps at the site), and I am getting bored with that particular 1,600LY run.

Support ticket submitted ... but it says the response time is 48 hours, so I may be going to miss the fun. If you're at the Conflux site, you could check whether you're instanced with me (you'll find my rover wrapped round the support struts of the hab module near to the gantry with the ramps) - and please come and give me a supporting flash of the headlamps

Assuming you are not on a console then if it happens again all you have to do it start the game in non-Horizons, it will put you in your ship in orbit then you can restart Horizons and find your SRV is back in the bay.

when you opt to go this route, do you have to redo the mission or whatever you were doing from scratch? And if you were carrying cargo/mission item, do you lose that or is it safely onboard the ship as well?

Don't believe so. I have self destructed in SRV few times except nearest outfitting station for OP is thousands of LY away I believe.
