Systems players have been in

There's edsm.net, although that inevitably only records data from users of edsm (that's a lot of players, though, mostly on PC).

But there's nothing in game, as far as I'm aware.
 
Typical traffic for most systems I go through in the bubble seem to average around 2 ships an hour (40-50 per day). Consider that's across all platforms and includes ships that were just passing through.

With the way instancing seems to work- well lets say if any of those were waiting for any type of interaction with other players I'd suggest they'd have more than a touch of the space madness by now.

There is a traffic report bulletin for each populated system in-game, it lists how many & what ships visited the system in the last 24hrs and only counts players, although not individual players (ie a single player may be counted multiple times if they jump in & out more than once). It's usually the bottom bulletin, if there is no report no players visited in the last 24hrs.

There is no easy way to find one but if you check every time you dock it should give you an idea. Another (less useful) indication is the number of different names for the mapped tag on the system map. If one player has them all it suggests few players regularly visit it.
 
If it's a quiet system you're looking for OP, I can recommend parking yourself at Calatrava Colony in Qi Yun Cech. I once got on the top 5 bounties list because of a planetary scan mission bounty (500 credits).
