Thank you! I looked through the EDSM data and this might actually be it, body C6 has large gap in it's rings. The only thing that worries me is that on the screenshots the ring looks like it is illuminated by something blue and the system has only yellow and red stars. Still Byeia Eurk ZC-S c5-9 is worth checking anyway :)
I uploaded my logs there and it's one i discovered first so should be it!

Just discovered this ELW, which orbits a binary pair of Gas Giants. Also it is interesting to note that the whole system is orbiting 3 stars. Is this unique?

It's hard to say. Anything involving binary orbits is really hard to analyze in the data. In terms of orbiting 3+ stars, it's something like 1% - 2%. Both things together will certainly make it uncommon, at least.
