So - I just made a REALLY good salmon sandwich.
Not a salmon salad sandwich; this is Friday and for us from the maritimes fish is for Fridays. I made this one special.
I sauteed the salmon steak with dill and cajun spice, then baked it with asiago and lemon. A layer of toasted cheese on top with Greenleaf lettuce and tomatoes grown by my neighbor, on a sliced baguette that I'd fried in the pan. Handmade dijon mayo as a topping for a bit of a tingle.
You'll need to go a LONG way to get a better sandwich than this.
Didn't even have to put on a headset to make it either.
