Newcomer / Intro Up to date mining location?

standard i'm not new but have been away from game 2 years disclaimer.

I recently got the game back after watching a bunch of ED videos. Seems like mining is currently the best money maker, but the spot/method seems to change weekly, if not daily.
Whats currently the best method/spots? I've got a python to use so that's not an issue.
