I'm on an assassination mission, and the target appeared at location then zoomed off, I've found the nav beacon and scanned it. Supposedly its given me info but I cant find or use it.

The mission target only highlights the sun in this system.

Do you know how to scan nav beacons? Some people struggle with that.

Your target may have jumped to, or be, in another system. Check your galmap for the mission marker. Or your mail - you may have been further instructions.
Check your inbox. You may have further instructions there. Failing that, cruise around in Supercruise for a bit and scan the ships. My experience says that they show up after a bit of time near the highlighted body.
You can just jump out and back in if he did leave.
