I genuinely can't bare the thought of not using a grid otherwise it'll be too imperfect, If it's any help, I suffer from OCD.

I'm aware this is a nit-picky personal issue, but otherwise I can't comfortably play Planet Coaster.

But it's imperfect and completely irrational to have a park made of 90 degree corners. You can kinda help yourself a bit. Just leave angle snap at 90 degrees. For paths and building grids.
