In a Sidey, your choice of modules is somewhat limited - just A-rate everything. And if you don't want to use engineering, that's about it.
My suggestion would be this:

The critical point in every build is the power plant, since this is the single system that can't be repaired in the field by any means, you'll need a dock. And since you excluded engineering, you can't put Armoured on it (or anything else).
As for the rest:
- fuel scoop should be obvious
- SRV so you have something to do and can collect materials for synthesis (including repair)
- small shield, since there isn't any space for more
- AFMU so you can repair at least your internal modules
- DSS for scanning planets
- hull reinforcement, since there isn't anything more useful to put in there
If you skipped the SRV, you could load a cargo rack (for the limpets) in there and a repair limpet controller instead of the hull reinforcement, to repair your hull (and canopy) - but then your options for collecting materials would be reduced (not removed, but it becomes more risky or more tedious, depending on whether you want to surface scoop in the Sidey or only collect mats from asteroids).
Small laser to tickle space lifeforms (sometimes, they react and let you get another tick in the Codex), mining laser to get materials from asteroids. Heat sink launcher just in case (the Sidey isn't exactly the coolest running ship in the game), shield booster because there's still some space and power budget left.
