2 x 1080@ but no SLI for Rift?

I'm a little unsure on this.

I have 2 980ti's at the moment in SLI, I fancy getting a rift so I would upgrade to a 1080, I understand the Rift doesn't run in SLI.
So if I get 2 1080's and have them running in SLI as default will it simply revert to a single card when I load up Elite and use VR?
I'd like SLI for other games and stuff but don't want to have to faff about with endless settings when i want to play Elite VR.
Will Elite be happy just to ignore the other card and carry on regardless?
 
Yes, turn off SLI before booting the game and all shall be well.

May I ask why you have 2 x 1080's? Seems overkill given the performance.

He said he was thinking of getting 2 1080s rather than already owning 2, i run 2 970-s with SLI on when i run my CV1 with ED and it doesnt seem to affect performance detrimentally so it is probalby not necesassy to switch off SLI before starting ED.

I have been running two ASUS ROG STRIX 8GB OC GTX1080s for some time. No need to worry about turning anything off with the latest Nvidia drivers the way it was with my 980Tis in 2x SLI early this year. Then I did need to dedicate PhysX to one of the cards manually effectively disabling SLI for Elite. That's not the case anymore. Plug and play.

For ED only you're probably better off with getting a Pascal Titan but I have no performance issues with this setup so I didn't bother.

As to why 2 1080's, I always load my gaming rigs up with the highest spec I can, I just like the feeling of putting everything on maximum and not having to think about it!

I shall investigate this Pascal Titan of which you speak!
 
VR doesn't work with SLI, yet. I'm guessing it may do in the future, although timing is critical in queuing VR.

Regular SLI users would have something to add, but I think disabling SLI works better in ED VR. Ed doesn't use the second card at all, so any driver overhead is just costing you performance.

Titan X Pascal is the most powerful (game) card out there right now, and will exceed the upcoming GTX 1080 Ti by a bit, but costs a pretty penny too. It can run ED in VR at max detail and _mostly_ at the native 90fps. Until the next generation from nVidi/AMD it'll be the king for ED performance.
