Arduino Pro Micro clone plus MPU6050 motion sensor = low latency , cheap head tracking. You can build it on breadboard or etch a pcb or buy a custom PCB especially designed to help put it all together.

Do you have an STL file of this, man? I want to print this out in a dual extrusion printer with two colors of nylon filament. What’s the software program/app you used for the 3D design?
