HM 1: Scottish Highland Cattle as it is my wishlist #1 BUT I think out of all of them would be the one best possible through mods
HM 2: Toco Toucan and Bottlenose Dolphin, as both of them would be on this list but they just would require an entirely new mechanic so I feel like skipping them here
