I remember that, back in the '90s, Maxis (the people behind SimCity and The Sims) put out a couple of park simulators called SimPark and SimSafari. These were about running nature parks with animals running wild in an ecosystem you had to maintain, but you would also have human visitors who would provide you with your income (SimPark was set in the continental US whereas SimSafari was themed around the African savanna). In SimSafari, you would also need to protect the animals from poachers by giving the local African villagers jobs in your park.
As far as I know, there aren't too many games like these out there on the market anymore. Most games where you run a park with animals have you confine them in limited enclosures within a zoo setting rather than letting them roam around the wilderness, foraging for themselves and breeding as they would in nature. I think a modern-day spiritual successor to SimPark and SimSafari, where you stewarded a thriving ecosystem and let people watch the animals in their native habitat would be spectacular. It'd be like a free-range Planet Zoo, or maybe even a free-range Jurassic World: Evolution if prehistoric creatures were available to plop down in your world.
