Do we know if we'll have the option in the future to have a full crew of a.i who we can customise? Also any date on moving around our ships? Those are two things that i think would really make the game feel a little more alive and personnal.

Walking/floating in our ships, well, we don't know, but plenty of Elite commentators are touting that feature to be in early season 3. Possibly, the surprise update for 2.4.
