From what I have gathered on the forums there is an upper limit on materials you can hold, 300 units. My question is, how do I dump the excess? Do I have to craft useless items (thus potentially using useful materials in the process), or can I dump excess Sulphur at my leisure?

On the Inventory tab, select the Materials menu, then select the material you wish to dump.
There's a 'Discard' option there...
