I guess you learnt the lesson that you can't face-tank a FGS.
NPC FGSs are very slow and can't turn very fast either. You should have attacked from behind and then stayed there by using your thrusters. I don't know how easy that is using keyboard controls as I've only ever used HOTAS. It might be easier in a Viper, and it's so easy in a Vulture that you start to feel sorry for them.
