It would be cool if there was a way to build custom dinosaurs using traits from the existing dinosaurs. Maybe something in the genetics building which would allow you to try to combine genetics from learned genetics. Ultimately creating some new Hybrid dinosaurs. Or possibly even the ability to customize by creating them in some kind of dinosaur editor where you can sort of design what they might look like. Sort of thinking something similar to the creature builder in spore.
