It would be great to add a filter for continent and biome for those trying to build in such a fashion (and theoretically shouldn't be too difficult)

It would also be useful to remember the most recent filter and offer ability to save pre-set filters

Yes! I always have to remember which species are living in which continent for themed zones of a zoo or entirely themed zoo. It would be awsome to have a continent filter for starters. Or have a tooltip on the animal listing showing their continent and biome(s).
