Just as the title says any animals your yet to use in game. For me African wild dog,both lemurs,gharial,sable antelope,Japanese maquace,caribou,and arctic wolf not because I don’t like them just for whatever reason haven’t used them. For the lemurs it’s a simple reason I want to get better at building indoor habitats first.

Only some of the “clone animals” because when there are two very similar animals I just pick which one I like more and use that one.
So I have not played much with himalayan brown bear, aldabra tortoise or siberian tiger.
I might use them eventually in some themed zoo, but for my regular city zoo, I choosed grizzly, galapagos tortoise and bengal tiger instead because I like them more.
Edit: also bonobo, using chimps instead.

Camels, beetles and the black wildebeest remains untouched
There are SO many that I haven't included into my zoos yet. My main zoo has a slowly growing variety that is often added to by the community challenge, or the rewards from doing them. In fact, last night I added the Chinese Pangolin since I finally figured out how to make the burrow I wanted for them. So I think I have included maybe 20 habitat animals, and 2 exhibit.
The ones (habitat) that I know I haven't included in my zoos yet are the African Elephant, either of the crocodiles(?), Timber wolves, Bonobo, Aardvark, Tapir, Orangutan, Warthog, Panda, Himalayan Brown Bear, Hippo (either), Nyala, Siberian Tiger, Snow Leopard, Hyena, Springbok, Lion, Chimpanzee, and those from the Arctic DLC.
One day, I do plan to have all of these in my main zoo, but I sometimes find it hard to add another animal because my system decides to go alert crazy. And idiot that I am, I often leave the zoo running while I deal with the issues, so more issues pop up. Or I get too busy trying to figure out why whoever is not breeding and try to resolve that issue.

I have only played through with animals in career mode (and haven't completed them all), so quite a few at present I haven't used yet!
The peafowl sticks out to me as one I haven't even considered yet. I also haven't used the brown bears (grizzly or Himalayan), or the Formosan bear, and I haven't played much with the Arctic Pack yet except the polar bear. I am planning a new zoo which will have a sort of 'Bear Grotto' style exhibition with the Formosan, Himalayan, and polar bear in three habitats.
I also haven't yet used the African elephant (I prefer the Indian), the bonobo or chimpanzee (though I want to, I just haven't had the chance yet), or the bongo (another one I really like but haven't gotten around to yet). I also haven't used the Thomson's gazelle (I'm more familiar with the springbok in real life, and I don't see the point in having both).

A lot actually... I build slow, re-build often, take my time... Didn't try a lot of animals yet, not even my favorites, the Orang Utan. But they're planned for my current project.
One animal you will sure laugh at me that I didn't use yet is... the peafowl. Stats say, germans use them very often, but I didn't have a single one in my zoos yet I did not finish my first zoo and in my second I'm not that far yet. Asia has yet to be build.
I haven't used a single deluxe edition animal yet as well. It's crazy. What makes it even more crazy is. that I impatiently await more animals, even though I have nearly used every animal in game yet. It's collectors fever.

Well, if you count beta, I only never used the Komodo Dragon and the Saltwater Crocodile. Since release I didnt touch the Gemsbok, Warthog, Gharial and the Mandrill.
Oh, but for the exhibit animals I cant even tell, I tried out all that were in beta and both Iguanas, but all in all I hardly ever put them in my zoos so I am sure there are many I did not yet use.

No big cats yet... been drawn to many of the small to mid size animals, I have done some Asian bears and rhinos but otherwise no large animals. And since some of my first enclosures devolved into CONSTANT animal fighting for dominance or an imbalance of the sexes, I’ve been avoiding pack animals haha.
Tried my first primate today, Mandrills, quite fun to watch in their enclosure. Never done any other primates or monkeys but I think I got the hang of it, only a couple escapes lol. Next, gorillas?
