Can't you Bootcamp Wndows on that?

might be wrong but from what i recall bootcamp requires an Intel CPU

you could try running ED in something like Wine or Parallels

Can confirm that Parallels works to run ED. It's not great, and planets render oddly and seem occasionally to cause crashes when I try land on raw surface bits, but overall the graphics are gorgeous on a high DPI display, and the game runs smoothly under most conditions. I've not tried heavy combat with it, but it shouldn't be too bad.

For reference, I'm on an M1 MacBook Pro running Parallels and an ARM distro of Windows.

EDIT: I should note here that it is well known that Macs do not "game" well, at least not in the sense that normal Windows-based gaming rigs do. I happen to prefer Mac for some things, and Windows for other things. However, I would personally recommend using custom or gaming-specific hardware, which usually means Windows. Since I cannot presently afford to own two PCs, and I am a man of science, this "Can it run on Mac?" challenge is quite entertaining for me!

In related news, NVIDIA's GeForce Now works fine on M1 if your network can handle it. I've been playing it this way for a week now with no real issues. I'd recommend going for the paid plan, which is much cheaper than a Windows gaming rig or even a console over several years (assuming GFN's subscription price doesn't change in that time).
 
Also, I gotta say, it's surreal to play a graphics-heavy game like Elite and not even have the CPU fans spin up any. Idle and nearly inaudible the whole time on M1!

It will be if playing on Geforce now, essentially all you are doing is interacting with a YouTube video.
