Are we going to be able to really plan the park ahead?

If I really want to get the most out of any particular island, I need to be informed ahead, since I guess we can not simply move existing buildings etc. later in the game

So I need to know such things as:
- how big the available area is
- how many buildings I will end up at least
- what space these buildings are going to take up
- how much space dinosaur X needs at least (if dinosaur X needs a given enclosure area, will it still be happy, if the enclosure will be filled with 20 other dinos of the same species?)
- Etc.

I just wonder how manageable the mid- and endgame will be.
 
You're not playing on one island but on five islands.
The area size will differ from island to island with Isla Sorna being the biggest area.
It depends how many buildings you want to have, you might have two hotels and three restaurants or choose to get more enclosures and do with one hotel and one restaurant, that is all up to you what you build.
Some dinosaurs need bigger spaces than others and some need company from their own species to socialize.
 
I don't think it's going to matter in all honesty. Given how much (or rather little) space there is on each island most setups are going to be very similar from one player to the next.
 
One idea was to build 'backwards' e.g.: build paddocks and paddock related attractions first then build towards the Monorail entrance, that way you know what space you'll have left for amenities. However I imagine the first couple of attempts of this could be expensive so I may only do this for Nublar.

That was my plan, you can also demolish buildings to re structre the island too.
