Anyone know how to scan an asteroid before mining it?

You can't. Just shoot it to find out what's inside.
No point in mining it. I spend a large amount of time getting the creds to turn my sidewinder into a miniature mining rig, and the profit is terrible. 1-2 hours of mining and you can hardly make 5-15k CR, depending what you're able to refine.
Might as well be a delivery boy for 3 times more CR in the same amount of time.

That is because the sidewinder is a terrible choice for mining.
Give me the CR to buy something more appropriate, and I most certainly will get something better. Until then, I can't afford jack.
If you are at a field with a high concentration of quality asteroids (read: metallic and pristine reserves), you can easily fill the hold of a Sidewinder with nothing but platinum, palladium, and gold in about 15-30 minutes, which will average you ~14k a ton.
Location is everything.
