You can't.
But you can shoot them to get unrefined metals out and occasional materials for engineering.
Also considering the effort people must go to put them in place and the constant stream of their mining lasers you don't get that much out of them.
I have a feeling that machinery like that would go against how Fdev want us to play the game anyway.

I would love to be able to set up a mining rig and leave it for a couple days, come back and fill my hold. Unfortunately it doesn't seem to be on the cards, unless Frontier are keeping it very quiet...
