Newcomer / Intro Avoiding collision

So, thus far I have killed pirates and hunted for bounty quite successfully, and now I'm in a viper.
I tend to find ships from the contact tab, scan them, and if they are wanted I interdict them, run a K-warrant scan, and put them full of holes.

So far I have only died twice.
On both occasions, the same thing happened, which is a full speed head-on collision bringing me from 100% hull integrity to the insurance panel.

I don't want this to happen again, since it costs me a lot of bounty claims and insurance costs.

I try to pull out of a head-on in time, but sometimes the NPC's do so in the same direction and we end up nearly colliding.

First question: how to reliably avoid a head-on collision?
Second question: How to make my ship more resistant against collision damage?
 
First tip: Erm - move out of the way. Full yaw and pitch usually works great. You also need to watch their closing speed. If you're still getting hit, I'd bet it's because you're trying to get a couple more seconds of laser on their cockpit instead of avoiding the collision. Going head-to-head with another ship is also the most dangerous way to engage, btw. Not only from collision risk, but you're also placing your ship right in front of THEIR guns.

Second tip: Tougher shields - that are up, of course - (and I'm guessing heavier outside armor, but never had it) = less collision damage.

Don't end up in the 'joust'. It breaks down into either a stat vs stat outcome or a fiery death for at lease one ship on collision.
The NPC's don't put as much effort in getting out of the way as they used to, early on you could play chicken and they would always do their best to get out of the way while you just leave the throttle up. Now the player needs to actually pay attention.
Put 4 bars to shields when going head on, you are going to pass the other ship before your weapon power runs out and engine power is not going to help you in this situation.
I like to apply some lateral thrust to push me to the right when in a head on, I then yaw to point my ship back to the left so I am pointing at the target but sort of drifting right on approach. Not only does this help dodge some fire but the more off centre from the NPC's heading you are, the easier it is for the NPC to predict where to turn to avoid collision.
This maneuver should also put enough distance from you and the enemy upon passing that you will be able to squeeze in some final point blank shots as you cut throttle and attempt a 180; upon the moment of passing you can use a quick bit of flight-assist off to get the best out of that 180. If you have successfully maintained having the target relatively visible during this reversal you will probably have finished the fight in another 4 seconds.

Before you hit them 4 pips in shields and you should survive.

Its a logarithmic progression so 3 pips doesn't cut it.
 
1) If you outmatch the opponent in firepower by a decent margin, throw it in full reverse to both avoid collision and give you more time firing at them. You'll take a few more hits this way, but you can end easy fights quickly.

2) If more evenly matched, do as Ortikon mentioned, use a bunch of lateral thrust with optional turn-off of flight assist to slide past them to one side then turn to pursue.
