I'm going to be away from home for a few days in the near future and so won't be able to play. Am I ok to just leave my ship docked in a starport for a few days without playing or does the game required me to do anything in order to make sure I don't lose my credits/ship while I'm not playing?

just leave it. Will be fine.
As far as your ship is concerned, the game does stop when you're not playing. You can leave it parked on an ice planet, floating round a class O star, whatever you like. Nothing happens unless you're actually in game.
Mission timers still keep going, but that's a different thing.
