Missions to take footage in conflict zones. Missions to take photos of newly discovered stuff (generation ships, ruins, alien shipwrecks,...) and interesting places (tourist beacons make for some nice vistas, why no use them in the mission templates to make more use of such locations other than taking those pesky passengers there.
Or a Stock photo creator. Missions like "Take a picture of a Beluga landed on an icy body", possibly earning you royalties when used in advertisement by shipyards, instead of a one-time payment.
