I want to run around and collect loot for engineering. People say you can do it without fighting but I'd like to try fighting (dual sticks here). Can I do it with a Chieftan and no engineering?

You can do it with any ship without engineering.
If I'm collecting on-foot engineering mats, I do everything in an Imperial Courier. Right now, it's about half-engineered. But, I flew it for quite a while with no engineering at all. I like how it handles, the cockpit view is nice and it's a small ship, so I can land anywhere. I plan on fully engineering it eventually.
Here's the basic build.
I play around with the internals, but the basic purpose is to run around doing Odyssey missions. The collector controller is simply for picking up ship engineering mats as I run across them.
The hardpoints are sufficient for beating up NPCs and I will take on any small ship and most medium ships without problems.

The Chief is one of the best fighting ships. You can get heaps of materials just by helping security take down pirates in RES. It's so simple you could do that in a sidewinder. Some mats are better obtained from Conflict Zones and for that it's better to be engineered, but you can also trade for those mats.
