Orca. Medium sized, even if it doesn't fit on a medium pad. With 640 boost you'll never have to worry about pirates. Lots of limpets, nimble, fast between roids, great vision. Best ship I've tried.

Challenger has not been mentioned., or the Crusader. These will mine 64 tons pretty fast and blow pirates up.

Well armoured and agile, and a lot of gun slots to cover mining and defense.

Well armoured and armed but internal slots are not very well suited for non combat operations... deffo can be done but you really do see their focus design when doing so. They are really nice flying though with makes mining not so boring....

Challenger is the better ship in this case. It has marginally better jump range, a stronger shield, is slightly faster and more maneuverable (especially with less pips to engines), and has better hardpoints for defending itself. Of course, the Crusader isn't that much worse and is ~7M CR cheaper, so it's still a pretty decent choice.
