I've recently been trying those big 100k+ bounty-hunting missions. I don't have enough credits to outfit a Viper the way I need, so for now I've been running my Eagle.
All the equipment I have is "A" class, except the Shield Generator (C) and Thrusters. The reason is that the Eagle is energy limited. Even with a A-class power generator you can easily overload the craft with weapons and shields and thrusters.
Here's my weapons loadout:
At this, I'm 10% overdrawn on power so I have to prioritize systems to shut-down the FSD and cargo-scoop when hardpoints are deployed.
Later, I switched to a single Beam laser with 2x missile racks, slightly better but still a hard fight.
I tried Torpedo launchers: don't waste your time, they only moderately damage an Anaconda and only give 1 shot.
So here's the missions:
(this is an example, these pictures are from multiple missions I have done recently so the names aren't the same in later pictures but the Missions all play-out the same).
Incase you didn't know, the way this works is you fly around in the systems and eventually find an Unidentified Signal Source (USS) where you meet some ships that say "Whoa I just met ___ and he was in ___ system. These NPCs are usually not wanted, and will just fly around randomly with no other action after they tell you their story.
You will see "mission updated" with the new system you can find the target. If you go to your left-side Nav Panel and go to the Transactions tab, the updated info about the new System will be in there also, incase you forget.
At the system the NPC told you, you fly around looking for USS and eventually you will run-into the target. Be ready, they will be expecting you.
In one case, the Anaconda one-shotted me (Plasma Accelerator?) that blew out my canopy and took me down to 20% hull, I had to limp back to a station for repairs. So when you see them, immediately boost to get behind them.

I had to boost-away for repairs, came back later and found the Target at another USS:
This last 1% took forever to finally take-down.
Others did not end well for me:
Incase you didn't know, once your canopy glass is blown-out you can't see any of the indicators on the HUD anymore, makes it very hard to fly and fight when you don't have targeting indicators. Good thing I bought that A-class Life support system!

The main challenge I find with this is the Eagle just can't bring enough Damager/Second (DPS) to take down the Anaconda quickly. My fighting time is limited by how many shield-cells I have (in my case, 9) once I run out of those, I'd better be _really_ close to finishing him off, or else I must retreat. I once had an Anaconda down to 1%, and with 2 beam-lasers going full-blast It still took _forever_ to kill the Anaconda from that 1%.

I know in Beta, the way to fight Anacondas was to select their drive sub-system and shoot that to stop them moving, then you can shoot them while they are stuck.
But in the released game, it seems sub-system targeting doesn't do anything?
I once targeted an Anaconda's Power Plant and had to down to 8%, but it was still shooting and moving and boosting around, doesn't really seem to affect them. Also sub-system damage doesn't happen any faster than overall hull damage, so don't see how its any advantage.
