Hi I am trying to find undiscovered Bio when a planet is scanned using DSS will it display undiscovered signals

You can see in the top left in the DSS what is present on a planet

It won't tell you if whatever you find is "undiscovered" - all it does is show you an overlay of where that type of "bio" can be found (you can cycle the displayed type using keybinds - mine is q and e which I assume is default).

Once you've scanned a bio, it lists the bio you've found somewhere in the system map and shows if it's been logged by someone else.

Yes, this is correct. There is an Exobiology info panel on the right side of the system map. Look there.
