So lets say i want to rename my first cat but its not at the bonding circle anymore, how do i get it back there? also why are there so many houses in fur town when there aren't even that many cats?

To go back to a cub you no longer have in the bonding circle, just look for it's hut in Fur Town and select it from there.
The reason for so many huts is that there are a lot of different cubs (there's actually more cats than huts, which is why the pre-order cats are stored in the scan stone), som eof these are unlocked in-game, others are the various plush toys that you can buy and then scan into the game.
