There's a way to bookmark a Point of interest?

You can set a bookmark in your Nav Panel for some things, not sure about all POIs specifically.

Usual way is to tag nearest object and edit the name, or bookmark the main star for easier access from GalMap

If it appears on the System Map, then yes.
If not, then not.
