Is it possible to pull off some sick moves like the BSG pilots viper pilots in this game. I'm trying to improve my piloting skills, and wonder if anyone had success flying like this.

Yes.

To really be an ace fighter pilot you need to learn to fly with flight-assist off. Once you learn to rotate your ship independent of it's vector, it's a whole new ball game.
