Can someone explain how Elections work?

Just for reference, I was working with 9 mio pop system all alone just recently and I did get over 5 % (something like 7-8 %) daily increases with 20-ish missions done. Pratically speaking zero traffic system so no opposition. IF you were getting only 4 % increase during 2 days (averaging 2 % increase per day), it's pretty clear sign that you were been worked "against" already by someone(s), imho (assuming you were doing 10 or more mission per day). And when you went on "day off", they continued. On such relatively low pop system it could be done by 1-2 players. Specially if they added some exploration & bounty dump on top of mission running.

Thanks! Is that cap per player or for that faction total?

10 transactions is for that faction if unopposed. If there's opposition, it becomes more complicated. Basically, you'd need to do more than your opponent, but you would never hit the cap. You can get very close, but the cap will elude you.

If even 1 transaction is done for a 3rd party, it dilutes the cap even more.

There are also no limits on negative transactions, so those can throw the calculations off as well.

I would also like to ask: If the population is like several milliards (we have an earth-like planet in a system), it is hard to push a faction, especially if you play alone.
Getting a civil war and fighting and selling bonds - does it depends on population when getting influence?
Also, will it be easier to lower the influence of another faction in order to rise your own, when you're up to 60% and more (the more % - more missions to make for pushing)

The population does not in itself affect how much effort it take to achieve the maximum influence gain in a system. It does however reduce the maximum gain possible. Additionally a large system is more likely to have random traffic and ANY other activity will mean you have to work harder to gain influence. There is no simple answer to your second question - but yes it can be.

Quick question on Elections, if anyone can help - does selling to a controlling MF's Black Market while they are in an election state cause them to lose influence?
In my head it should, as this is not a combat-related activity, but do we know this is the case?

Honestly? Not as much as taking a stack of inf+++++ missions for the other side would. Even if it does work you'd at most get one transaction per visit to the station.
