Basically when I select open mode, when I enter the game and pause it says solo mode, and the fact that the game actually pauses gives me the impression its not online

When U first spawn you are in solo mode regardless, you switch to open after your first jump to HS.

Well pause is a rather misleading term, its not really pause, its more like a comforting feedback to the player. I personally like to think there is no pause and then i don't make any mistakes like flying into suns and such...... not that i have ever done silly things like this. Nor have I paused while in combat with an NPC, gone for brew and come back to an `accident` honest...
Best example is when docking using the docking computer, you will see clearly the docking continues, which means it is not pause.

It also doesn't pause the game unless you are doing the combat tutorials. Even in solo mode, you're still online and there isn't a pause functionality. Anyways, players are spread pretty thin. Just head out and you'll eventually run into one. Multiplayer is not a strong point of this game though. So be aware of that.
