Can't jettison mission cargo now?

Just imagine a newbie with 100k credits in pocket accepts a mission for delivering 100tons of palladium. He sells the palladium at high price and rebuy palladium at low price. Let us think that he makes a profit of 2000 cr per ton. This would make nice 200k profit out of nothing. He made than profit with capital that isn't from him.
He wouldn't be able to make this amount of profit with his own money.

To prevent this, the cargo has to be the same. No one is allowed to make money with capital you don't own!

Actually, I don't see a problem with the example you give. Not to say I'm right and you're wrong. I don't trade slaves, for example. That's my particular ethic in the game. A better mechanic than just blocking the player from selling or ejecting haulage would be some intrinsic value to the mission cargo. For example, to complete the mission, the palladium has to be of a specific purity. What you buy in the commodity market may not be as pure or you have to go to some specific refinery to get the required level of purity. This places the decision with the player as to how he/she fulfills the delivery contract.
